Incorporated in 2009…

JS2 Cattle was incorporated in 2009, but its roots are far deeper in Seminole County Fla. Jay Saucer, along with his wife Pauline and son Jay purchased cattle for their family land in Oviedo in 1973. The cattle were raised where Oviedo Bowling Center and the Oviedo Waterpark stand today until 1980 when the cattle escaped the pasture and were moved, with the help of the Seminole County Cattlemen's Association, to their current location in Geneva.

Over the years, the herd and the farm have seen multiple changes. The herd has been bred with Charolais, Brahman, Santa Gertrudis, Hereford, Beefmaster, Brangus and Angus bulls. The farm has been expanded and citrus was planted on 40 acres from 1993 until 2002. With the passing of our patriarch, the citrus was not viable and turned back into improved pasture for the cattle. It was at this time that Joe was coming into the cattle business and started working with his father. After a few years, demand for locally grown beef was starting to take off. We decided to start raising our cattle directly to customers, farm to table. All of our beef is raised without the use of added growth hormones, no steroids, and no antibiotics. All of the beef is raised on pasture and provided necessary feed for marbling and effiecient growth. Over the past 14 years our beef business has continued to grow and word of mouth about our high quality beef has spread all around central Florida.

 

Regenerative Agriculture

When Covid-19 changed everyone’s life in early 2020 and disrupted many supply chains, JS2 Cattle Co. knew that we needed to develop better strategies to handle demand for beef and the sustainability of our pastures. We made a decision to work into Regenerative Agriculture. Regenerative Agriculture is the idea of using different crops and species to work together to provide an ecosystem for the farm. As a result, we will be planting our pastures with multiple species to reduce our need to bring in outside forages and provide even better nutrition for our animals. As a part of this process we added pastured chicken to our farm to add natural fertilizer to our pastures. The birds were for sale as whole and quartered birds. 2022 added some challenges to our family that we have had to temporarily hault production of chickens, but they will be back!

 

2021 brought us new challenges and opportunities. One of those opportunities was the acquisition of an Akaushi (Wagyu breed) bull. This bull was purchased from HeartBrand Beef in Texas and will improve the marbling and quality of our beef in the future. We are excited to have the new bull and look forward to what his genetics will bring to our herd.

We have also had the opportunity to partner with Local cattlemen and cattlewomen to expand our capacity. We have agreed to work together to produce high quality beef at the same standards that JS2 Cattle has always held to. We are looking forward to having more capacity, reducing wait times for your beef, and also building a larger network of customers.

Our goal moving forward to create a positive network of local cattlemen and cattlewomen that can work together to fill freezers with beef in our community! We will continue to pursue people that want to treat cattle right and pick the best genetics for moving a cow herd forward! In addition to working along with other cattlemen, we started working with farmers like rex Clonts from Bigdaddy's organics to sell our beef and draw more customers for each of our businesses.

Our herd has evolved over the years and has a herd base with Angus, Brangus, and Charolais momma cows, some of the premiere beef breeds in the world. These genetics allow us to produce high quality beef for your table with most of our pastured beef. Our beef is never confined to a feedlot atmosphere, and always has access to grass or hay. Through these management methods and low stress handling of our cattle, it makes a difference that you can see in our beef.

When we made the decision to grow beef for your table, we decided from the start there would be no hormones, steroids, or antibiotics added to our beef. In addition, our family and workers are trained in Beef Quality Assurance handling techniques, the standard for the industry. That means, our animals are treated humanely and live a good life on our farm. We produce freezer beef in the form of USDA inspected hamburger, roasts, steaks and larger custom portions, Quarters, Half and Whole Steers.
